TIL: Most wasabi served outside of Japan isn't real wasabi, but a mixture of horseradish, mustard and food colouring. Authentic wasabi is the most expensive crop in the world to grow and is immensely difficult to cultivate. Once grated, wasabi root loses its flavour within 15 minutes.
